Muffin Tin Chicken Pot Pies {A Quick & Easy Recipe}

Last week I came across a delicious looking recipe for mini chicken pot pies over at The Best Blog Recipes. We love chicken pot pies, so I decided to give it a try ASAP. I made them last night, and they were a huge hit. I did things a little bit differently than Shauna, but I have her to thank for the awesome idea!

The best thing about these mini pies is how simple they are to make. The prep time totaled about about 30 minutes (including cooking the chicken) and they baked for 12. Quick and easy? Yes, please.

For the crusts, I used Grands Jr. Flaky Layer Biscuits (butter tastin') pressed into muffin tins. I was tempted to bake the crusts for a few minutes before filling them, but there was no reason to. They cooked perfectly with the chicken mixture inside. 

For the filling, I used one large can of cream of chicken soup, about 6 chicken tenderloins (precooked and cut into bite-sized pieces), a handful of frozen carrots, and a handful of frozen corn. We're not pea eaters around here, but I'm sure most people would enjoy adding some of those to the mix. I added a little water to thin the soup and a pinch of garlic salt for some flavor, mixed it in, and that's it. This mixture made enough for about 15-20 mini pies. I baked them at 400˚ for 10-12 minutes. 

This recipe is definitely a keeper for our family!
